Last month, the Weekender question was about what you BBQ. We loved your answers so much, we wanted to see what you were cooking. Send us pictures from your Fourth of July and show us what you BBQ/Grill/Smoke. It can be anything from simple burgers to elaborate meals. Show us your best. You’ve got lots of time to prepare.

51. to 55. Chicken Wings
I purchased the chicken wings from an Amish market; the are simply seasoned with Trader Joe’s Everyday Seasoning. I added pecan wood to the coals so that it would add a smoky flavor. They cooked off heat for about 35 minutes and then I slid them over for about 5 minutes a side. It was served with a cucumber salad and a cabbage and pepper slaw/salad.

60. Filet Mignon
Filet Mignon – salt/pepper/onion powder/garlic powder/paprika
Twice Baked Potato – cheese/butter/real bacon bits/pepper
Jalapeño Wrap- Cream Cheese/Bacon/paprika/garlic powder

61. Pineapple Marinade 6 – 12 hours
2 cups oil, 1 cup soy sauce, 1 cup worchesire, 1/2 cup pineapple, 2 tablespoons garlic powder, 2 tablespoons of pepper, 2 tablespoons of dry mustard

Some liberal seasoning with Zatarins Blackened Season will make you look like a BOSS, Count on it!!!

64. Ribs
I used a rub and some sauce. I won’t bore you with the details, but I make the rub ahead of time and the sauce comes from the grocery store. I spend some time pre-grilling the meat wrapped in aluminum foil. The final taste comes from searing the ribs on an open flame at the end of the process. I combined the ribs with some grilled corn and a few biscuits. Dessert was some fruit. Nothing fancy, just a nice meal.

65. – 68. Bacon Wrapped Meatloaf
Meatloaf spiral wrapped with a quilt of bacon. Smoked Chorizo mixed in to give it a little kick. Rubbed with my cajun seasoning mix and homemade BBQ sauce. Hicory smoked for 2-3 hours. Sprayed down hourly with PBR.

69. – 72. Smoked London Broil
London Broil marinated for 48 hours in my rib rub and yellow mustard. Smoked with hickory for 4 hours. Mopped hourly with bbq duck fat.

73. – 75. Oxtails
Oxtails marinated in a mix of worcestershire, garlic, soy sauce, fresh parsly, salt, pepper olive oil and balsalmic vinegar. Smoked for 2-3 hours and then simmered coverd in the smoker with a mix of red wine, fresh herbs and vegtables. Served over rice.
