In Bourdain’s book, Kitchen Confidential, he famously stated to never order fish on Monday at a restaurant because it would be terrible. He’s just recently rescinded that statement, letting everyone know a lot has changed in the past 17 years since the book came out. What hasn’t changed is that everyone in the kitchen is still slightly drunk and a little bit crazy.
