2013 Summer Grilling Photo Contest

Last month, the Weekender question was about what you BBQ. We loved your answers so much, we wanted to see what you were cooking. Send us pictures from your Fourth of July and show us what you BBQ/Grill/Smoke. It can be anything from simple burgers to elaborate meals. Show us your best. You’ve got lots of time to prepare.
Send your photos to us by Sunday July 7 at midnight for a chance to win. We’ll post more details and official rules on Monday.

1. Ah…this is Brooklyn grilling. When you have to do it in the driveway.

12. and 13. Two 9 ounce filets grilled and smoked on a Big Green Egg smoker.
Steaks initially seared at 800 degrees for about 30 seconds each side. Then I took them off the grille and let them rest at room temp for about 10 minutes as I let the coals (hardwood lump charcoal, 85% Hickory chunks 15% Mesquite chunks) reduce to a heat of around 425/450. Oh yeah, sprinkled Kosher salt and fresh ground pepper liberally on both sides of steak before initial sear…this is key, ONLY salt and pepper. Finally, I grilled the filets for about 3 minutes each side until a medium rare/ medium temperature. In second photo a Montecristo #2 cigar and a Rochefort 8 Trappist Ale.

14. and 15. Grilled Corn and Hamburger with Cole Slaw
Natural lump hardwood charcoal, cherrywood and hickory in big green egg smoker. Prime Rib ground rub beef 80/20. Grilled at 450 about 3 – 4 minutes each side. Cooked to a medium temp. Meat seasoned with Bobby Flays Texas Burger recipe seasoning. Dash of homemade BBQ sauce applied during smoking. Homemade coleslaw slapped on top.

16. 35 lb lamb and two chickens on a spit cooked all day.

17. Smoked Salmon, Honey Teriyaki Onions and Potatoes
Smoked Salmon: Soak a cedar plank in water for 6 hours. Rub whole grain Dijon mustard on salmon and sprinkle liberally with brown sugar. Place on BBQ to smoke. Onions: Score onions deep, create pouch with foil. Pour honey and teriyaki sauce over onions. Wrap in foil and place on BBQ. They will be done when your meat is cooked.

22. and 23. Brisket, Sausage, Hippo Eggs and Boston Butt
In the first pic we have sliced brisket, Westphalia garlic sausage and something we call Hippo Eggs!! A hippo egg is a cream cheese stuffed jalepeno wrapped in pan sausage then wrapped in bacon and seasoned with paprika!! The second photo is a slow smoked pork Boston butt roast. I didn’t even need to slice it. I pulled it apart by hand YUM FROM DEEP IN THE HEART OF TEXAS!!!
